It’s opening day at the track tomorrow, so what better time to publicize your new Saratoga Springs restaurant on national television — right, Kevin Connolly of “Entourage”?

On "Late Night with Jimmy Fallon" Thursday
He and Jimmy Fallon actually had quite a lengthy conversation about K-Con’s new investment at Siro’s (co-star Kevin Dillon is also an investor, as is Calvin Klein designer Francisco Costa and several other big names). And it looks like someone’s been taking paying attention to their business manager’s “PR for Famous New Restaurant Owners 101″ lessons: Kevin gets an “A” for his aggressive Siro’s commercial-disguised-as-talk-show-segment. It would have been an “A+” if the conversation didn’t nosedive at the end into a discussion about what terrible investments restaurants are. Uhhh.
Below, a transcript of how it went down on “Late Night” (video link to be posted as soon as JF posts it on his!). Also, notice how slickly Kevin drops a mention about how he “might” come up this weekend. Knowing full well that he won’t but that dumb bloggers like me will jump all over it anyway.

Jimmy: “The other thing I want to talk to you about — very excited about this — you just bought a piece of a restaurant.”
Kevin: “Yes, Siro’s — it’s Saratoga –”
Jimmy: “Dude, it’s so famous, I can’t believe it!”
Kevin: “Yeah, yeah. You know, I’ve never been. I’ve never been. (Audience laughter.) It sounds ridiculous, I know.”
Jimmy: “You invested in a restaurant, and you’ve never been to it.
Kevin: “No, no…”
Jimmy: “It is — honestly, it’s legendary.”
Kevin: “It’s legendary, I know.”
Jimmy: “If you go to the race track, you HAVE to go to — if you’re lucky enough to get reservations, you go to Siro’s.”
Kevin: “Right. Siro’s is the spot.”
Jimmy: “It’s the best. I’ve been there — I’ve signed the wall!”
Kevin: “Oh, you did? I’m going to have to see about that.”
(Audience laughs.)
Jimmy: “What, a paint job? ‘First things first’…”
Kevin: “I want to look — are there signatures there? I have no idea — ”
Jimmy: “Signatures in the kitchen, yeah. You gotta name a drink after me or something.”
Kevin: “I will name a drink after you. Can we talk? What do you think, any ideas? ‘Cause you’ve been there, you’re like a regular. Not a regular — ”
Jimmy: “Every time I go to Saratoga, I gotta go to Siro’s. It’s a fantastic restaurant.”
Kevin: “It’s the best spot — like, can you think of a — what else would be like that here…?”
Jimmy: “Mad Gambler? The Guy Who Loses Money at the Track?”
(Audience laughs.)
Kevin: “Yeah, I’m excited. We’re gonna try to go this weekend, I don’t know if we’re going to be able to make it.”
Jimmy: “How did you — what made you get into Siro’s?”
Kevin: “Well, my business manager put a few of his clients together, and..”
Jimmy: “Wait, your business manager told you to do this? He must be awful! So you’re going to lose money!”
Kevin: “It’s like a terrible investment, right? But Siro’s is not!”
Jimmy: “Siro’s is a legendary place.”
Kevin: “Siro’s is a home run. It’s been open for 30 years.”
Jimmy: “It’s only open in the summertime.”
Kevin: “I’m gonna change that. I wanna change all that. It’s my first order of business. It’s only open for six weeks, which is weird to me.”
Jimmy: “I invested in a restaurant, and it went out of business.”
Kevin: “It’s terrible, right? It’s a terrible investment.”
Jimmy: “It’s a really bad investment. And the worst part, I bought a horse. I bought a piece of a horse.”
